Bangin’ Banana Pancakes (Vegan)

Happy New Years Eve! On these relaxing mornings I feel it’s best to ring in the day with a tasty breakfast. The menu for this morning includes Banana Pancakes from the book “Thug Kitchen” and my homemade Truffle Crispy Crowns. So settle in, grab some coffee and lets get cooking!



Get a large bowl out and combine the following ingredients

-2 ½ c. All-purpose flour

-2 Tbsp. White sugar

-2 Tsp. Baking Soda

-2 Tsp. Salt



Save the following ingredients for later in the recipe 🙂

-1 ¾ c. Almond Milk

-1 Mashed Banana

Once your dry ingredients are combined, create a small crater in the middle.


Then add in your Mashed Banana, begin to stir, and slowly add in your milk until it is nice and smooth 🙂

Now time to get on the griddle! You know how to make pancakes, but however, if you’re a first timer, make sure you oil your griddle so the cakes won’t stick. I used Grapeseed oil as my oil of choice today. Slowly ladle out ¼ c. to ½ c. batter to create the size pancake you desire. Let them cook until you start to see many mini pocket bubbles popping on the surface. Do a quick under side check to see if they are a golden brown. Once golden, flip the over and do the same on the other side!


Beware, these pancakes are little more dense than usual and will take a bit longer to cook. Once done, remove from pan and serve with Organic Agave, Cinnamon and Extra Banana’s! Your family will gobble these up in record time 🙂 Sweet and Healthy! Not to mention you most likely have all of these ingredients laying around the kitchen. Enjoy!
