After a long holiday weekend it’s so hard to find the will to get out of bed. Luckily I have something that will spice up your morning and kickstart your back to work routine. Let’s take those long forgotten leftovers and make them something you can truly enjoy again. I hope you have some “bean mixture” set aside from thoseĀ Vivacious Vegan Flautas!Ā
Start with the following ingredients for the Vegetarian Version of this revamp.
-Half of a Bagel (everything is my favorite <3)
-¼ c. “Bean Mixture” from theĀ Vivacious Vegan Flautas Recipe š
-A handful of Cheese (I recommend Lite Shredded Mozzarella)
-A few slices of Avocado (load it on there if you like!)
-¼ tsp. Oregano
-Non stick EVOO for your pan
Turn your oven on Broil, while it’s warming up we can begin to assemble our SAMWICH <3. Spread a layer of your “bean mixture” on the bagel. Sprinkle your handful of cheese on top, layer your avocado on and add the oregano to finish it off. Place on a small baking dish that has been sprayed with non-stick EVOO and then place it in the oven for 1-2 minutes (until it browns and crisps to your liking). Feel free to add some Salsa or Hot Sauce for a little added kick! Once you take of bite of this, you’ll have an entirely new appreciation for leftovers!

Vegan Option
Begin with the following ingredients:
-1 Whole Bagel (everything is the best!)
-1 Slice of Extra Firm Tofu (about 1/6 of the Block, drained)
-¼ c. Chopped Red Pepper
-¼ c. Chopped Onion
-¼ tsp. Oregano
-Slices of Avocado (as many as you like!)
-¼ c. “Bean Mixture” fromĀ Vivacious Vegan Flautas Recipe
-Non stick EVOO Spray
To further assist in simplifying your cooking, I typically spend one day a week as “Veggie Prep”. This is where I chop all of my commonly used ingredients so I don’t have to do much chopping when cooking time comes around. As you can see here I store them in mason jars to retain their freshness for weeks!
Now let’s get back to business. First we will need to scramble your Tofu, simply take a fork and start pressing it into the Tofu until it looks like the photo below.
Add the scrambled Tofu to a small pan (on low to medium heat) that was sprayed with non stick EVOO, throw in your Red Peppers, Onion and Oregano.
Stir and cook for 4-5 minutes, you will then see your tofu become slightly golden. At this point add in your “Bean mixture” and cook for another 2 minutes until warmed all the way through.
Toast your bagel and remove mixture from heat. Spread it onto your bagel and top with Avocado slices (I add a pinch of salt on top of the avocado).
Keep in mind that this SAMWICH can get a bit messy and you may need a spoon š Enjoy and tell me what you think!
