Big Pleaser Caesar Salad (Vegan)

Winter is known for its comfort food cravings and dislike of all things cold. So when I saw that The Thug Kitchen Cookbook had a recipe for Vegan Caesar Dressing, I didn’t immediately jump for joy. However, after creating this recipe for myself I became hooked! So give this one a try for your lunch tomorrow or a lighter dinner tonight 🙂

I was in the grocery store the other day and noticed the price of a dressing such as this one was super pricey! Why buy a pre made dressing when you can simply make it yourself, fresh and with no added ingredients. So let’s save some money and get to cooking!

Start with these ingredients:

-⅓ c. Sliced almonds

-⅓ c. Hot Water (I used my electric tea kettle!)

-2 cloves of minced garlic

-¼ c. EVOO

-2 Tbsp. Lemon Juice

-1 Tsp. Dijon Mustard

-1 Tsp. Rice Vinegar

-1 Tbsp. Capers

-1 Head of Romaine Lettuce

-Handful of Homemade Croutons (Recipe below!)

Allow your Sliced Almonds to soak for 15 minutes in the Hot Water.

I then used the rest of my Hot Water to make a good cup of Tea 🙂

While that’s soaking lets make some Homemade Croutons!

Cut up an Organic Baguette into bite sized pieces. Drizzle with 2 Tbsp. EVOO, Sprinkle 1 Tsp. Garlic Salt and 2 Tsp. Oregano. Toss until everything is covered.

Place on a pan in the oven for 10 minutes at 400 degrees. They should look slightly golden but not too crispy, otherwise they will be a pain to bite into 🙂

Remove from pan and allow to cool. Now onto the Dressing!


Place the soaked almonds (including the water they soaked in) into your food processor along with the garlic, EVOO, lemon juice, mustard and vinegar.

Blend it all together until it looks like your standard Caesar Dressing!

Now we will add in our capers and blend for a few seconds once again!

Yay, looks great! At this point you can now move onto assembling your salad! However when I reached this step I wondered if I could make this a bit more creamy by adding avocado. So I decided to remove half of the dressing and create two different salads! If you would like this version as well, all you have to do is add half of an avocado and 2 Tsp. of Almond Milk, then blend until creamy once again.

From here you can take your Fresh Romaine and begin to build your Salad! Top with Croutons and enjoy!

I personally felt that the Avocado Version of this Dressing had more of a “green” taste to it. So if you are feeling a bit more Veggie Flavor, add it in! However, I felt that for my Caesar craving the original dressing was better 🙂 Let me know what you think!
