I have always loved the simplicity of quesadillas, quick and easy. My life basically consisted of these tiny cheese filled circles, however as I have grown I prefer them vegan and fully loaded with goodness! This recipe is so wonderful because you can easily roll these up, put them on a pan in the oven and create Flautas or Enchiladas out of them! Make your left overs work for you! So let’s get started 🙂 You’ll need the following ingredients:
-Organic Vegan Tortillas
–Lantana Black Bean Hummus
-Nutritional Yeast or Daiya Vegan Cheese
–  ¼ c. Organic Frozen Corn
– ¼ c. Chopped Onion
-¼ c. Chopped Red Pepper
-1 Avocado
Also have these seasonings on hand and mixed together, as shown below 🙂
-1 Tsp. Chili Powder
-1 Tsp. Cumin
-1 Tsp. Paprika
-1 Tsp. Onion Powder
First what you will want to do is get your onion, red pepper frying in a small cast iron over medium heat. When they begin to look nicely browned (approx 1-2 min), add in 1 Tsp. of your spices mixture and stir. Once combined, add in your frozen corn, place a lid on top and allow it to steam and soften (approx. 1-2 min). Remove from heat when veggies are done, and we can begin assembling our quesadillas 🙂
Quesadilla Building:
- Take your first tortilla and spread a nice thick layer of Lantana Black Bean Hummus on it.
- Sprinkle some Nutritional Yeast or Daiya Vegan Cheese on top of the bean spread.
- Sprinkle some of our Spice Mixture on top of bean spread.
- Add strips of Avocado
- Add Fire Roasted Onion, Corn and Pepper Mixture on top.
- Add top tortilla and place on flat cast iron over medium heat.
To cook them is even easier than creating them 🙂 Just keep peeking at your Vegan Cheese to make sure it’s melting (typically it’s best to cook longer on low-medium heat vs. only medium, this helps the cheese melt without burning the tortilla). If you used Nutritional Yeast you will simply be looking for your tortillas to become nice and brown on either side 🙂 You only need to flip it once, and when it’s crisp to your liking remove from the heat and enjoy!
