Do you have that Sunday morning craving for a big breakfast? I definitely do. Luckily I picked up some delicious LightLife Vegan Bacon at Kroger the other day for this exact situation. Many of you may be skeptical about Vegan Bacon, however this brand is delicious and easy to make. Give this a shot and tell me what you think!
-Start by making my Bangin’ Banana Pancakes (Vegan) recipe for the batter.
-Dried Rosemary, Basil and Oregano
–LightLife Vegan Bacon
Start by drizzling EVOO over your chopped potatoes and eyeball the amount of dried spices you want, mix together and place in a cast iron. Place in the oven at 400 for 30 minutes (hit broil for a 2-3 minutes at the end to get them really crispy).
After that, place a few strips of Vegan Bacon into a pan and fry until crispy (2 minutes each side). Place onto paper towel to cool.
Next step, take your Bangin’ Banana Pancakes (Vegan) batter and drop them onto your preheated skillet. Take your Bacon, cut in half and push into the middle of your batter.
Allow to cook like normal (until you see bubbles rising), then flip and finish cooking on the opposite side.
Remove from pan and top with chopped Vegan Bacon Bits, then sprinkle with cinnamon 🙂 Add a side of your homemade hashbrowns and BAM, big breakfast for cheap and easy 🙂 Try this Vegan Bacon out on various sandwiches, BLT’s, burgers etc…
