Its it possible to eat healthy and keep yourself full for a 12 hour shift? Also, how do you have the patience to pack a full meal for 3 shifts out of the week? The answer is simple…meal prep or die. Here is a simple outline of what I bring to every shift, dishes may vary but the categories stay strong. Try this out for your next shifts and let me know what you think!

-Entree
-Veggie
-Breakfast
-Chocolate
I start by creating mason jars full of my favorite fruits. This week was Pineapple and Strawberries. These will last for up to 4 days.
Typically I will then add in a Vegetable, roasted carrots is my go to. Peel them, spray with EVOO and place in the oven for 45 min-1 hour on 425 degrees, turning throughout. These will last for 2-3 days.
Next I create a dish that I can pack for 3-4 consecutive days, this weeks choice is Latin Bean Soup (recipe to follow).
My breakfast is either Mixed Nuts (almonds, cranberries, cashews), or a Bagel with Avocado. I don’t eat when I come home from work, but I will consume about ¼ c. Nuts with my Fruit around 3-4am.
Then I always end my Entree with a small bit of Chocolate 🙂 Typically Vegan Dark Chocolate can always be found in my lunch box.
Prep all of these and store for your consecutive shifts. Then you can simply wake up, replace the jars in your lunch box and head out the door for your next night, no thinking needed 🙂 Make healthy something that takes stress away 🙂
