In my previous post of Midnight Shift Madness (Vegan), I mentioned a Bean Soup Recipe that I love to make for my many lunches 🙂 Here is the recipe! It is simple and will save you money, feel free to substitute the noodles or frozen veggies for whatever you may have in the house. I like to consider this the “dumping ground” for left over veggies and pastas 🙂 Give it a try and let me know what you think! You’ll need these following ingredients:
-3 cans of Organic Kroger Spicy Black Beans ($1 a piece)
-2 c. Organic Vegetable Stock/Broth
-1/4c. Chopped Sweet Onion
-1 c. Organic Frozen Corn
-1 c. Organic Frozen Peas
-2 c. Organic Noodles of your choosing (I prefer Trader Joes Brown Rice/Quinoa Pasta)
-1 Tsp. Cumin
-1 Tsp. Chili Powder
-1 Tsp. Paprika
-½ Tsp. Salt
Take your largest pot and throw in your ¼ c. Onion in with ½ Tbsp. EVOO on Medium Heat 🙂 Sauté until golden brown.
Next add in the rest of your ingredients (dump the whole can of beans, liquid included) and stir 🙂 Place a lid on top and allow to cook over medium heat for 15 minutes 🙂 Make sure to stir in between so nothing sticks to the bottom!
After it has cooked, allow it to cool before placing it in your jars 🙂 You can refrigerate this for 4-5 days and enjoy a cheap/easy meal prepped lunch!
You can also add in Fritos or Corn Chips (These are both Vegan) for some extra crunch and flavor!
