Have any of you ever tried the Mediterranean Veggie Sandwich at Panera Bread? Well if you haven’t, you need to make this recipe right now! I am all for “healthy”, but I’m way more into “easy”. This sandwich is a great one to make for any audience, in fact I made them for our “Girls Night In” yesterday! And let me tell you, everyone was dying for another half! So let’s get cooking and make you a sandwich connoisseur. You will need the following ingredients:
-1 Loaf of Tomato Basil Bread from Panera Bread ($5.50), this bread also contains “Honey” therefore it is not Vegan. Otherwise it does not contain any dairy 🙂
-1 Avocado (mashed)
-4 Tsp. Garlic Salt
-1 Lemon
-1 Tbsp. Feta (optional)
-1 Cucumber (slices)
-1 Tomato (slices)
-1 Red Onion (slices)
-1 Jar Roasted Red Peppers, slice them prior ($1.99)
-Romaine Lettuce
Start by squeezing a whole Lemon into your mashed Avocado, stir, next add in 4 Tsp. Garlic Salt, now stir once again. Take two pieces of Tomato Basil Loaf and spread your Avocado Mixture on one of the slices (I like a large amount).
Next if you would like to add in Feta, do so here. However if not then you can just begin adding in your toppings. Layer your Tomato, Cucumber, Red Onion, Roasted Red Pepper and Romaine.
Finally top it with your second piece of bread and enjoy! I really like this sandwich because you are not only getting a ton of food, but you are also getting a lot of veggies as well! Get your carb fix, without going overboard 🙂 Serve with some bean soup or salad!
These sandwiches also hold up really well overnight, so feel free to make these ahead of time and let them chill in the fridge until needed 🙂
