Do you ever run into an issue where you want to eat something fresh from home, however don’t have the time to make it? Well you’re in luck with my Fabulous Frozen Burritos! You can make these ahead of time and enjoy for weeks to come! Simple ingredients and a simple recipe will make this a great go to for your work week š You’ll need the following:
-1 can of Kroger Organic Spicy Black Beans
-Chopped Peppers (amount to your liking)
-Frozen Corn Nibs (amount to your liking)
-1 ½ c. Mexican Rice (your favorite recipe!)
-1 Block of Extra Firm Tofu
-1 can of Goya Onion, Garlic & Cilantro Tomato Sauce
-1 Tbsp. Cumin
-1 Tbsp. Chili Powder
-1 Tbsp. Oregano
-1 Bottle of Taco Bell Hot Sauce & Verde Salsa
-1 Package of Large Burrito Wrap Tortillas
Drain/place your tofu on a towel 30 minutes prior to frying it. Next place your Black Beans (not drained), Corn, Peppers & Mexican Rice in a pot over Medium Heat š Stir until warmed and softened throughout!
Next take your drained tofu, cut into 1 cm. sized cubes, and place in a hot cast iron pan (make sure you cover the bottom of the pan thoroughly with EVOO). Fry until golden brown šĀ Add in Goya Tomato Sauce, Cumin, Chili Powder and Oregano, mix well š Allow tofu to fry until it has a slight char on it.
Finally you are ready to assembled your burritos! Place Black Bean Mixture, Tofu and both Hot Sauces into tortilla. Make sure all of your ingredients are placed on one side, it will make them easier to roll in the end. Tuck in the ends and roll forward š
Once all are rolled up, place them in a ziplock freezer bag and place in freezer for a later time! These will be good for up to a month:) Simply microwave or put them in the toaster oven to reheat š
